Thanksgiving Turkey Croissant
From a classic holiday meal to a creatively, repurposed holiday lunch!

We love the day-after-Thanksgiving leftovers as much as the next person, but holiday leftovers taste even better when they're repurposed creatively. Here I'll share my delicious post-Thanksgiving recipe for an easy turkey Waldorf salad.

Ingredients :

  • 1 cup diced left over cooked and chilled turkey

  • 1 large red apple, cored, and chopped

  • 1/4 cup chopped celery

  • 1/4 cup lightly toasted walnuts, roughly chopped

  • 1/4 cup dried sweetened cranberries

  • 1/2 teaspoon chopped dried thyme

  • 1 tablespoon Dijon Mustard

  • 1/2 teaspoon of salt and pepper

  • 1 cup of mayonnaise or plain Greek yogurt

  • Greens or croissants

In a large mixing bowl combine the diced turkey, chopped apples, chopped celery, walnuts, cranberries, and thyme. Next, stir in Dijon mustard and Greek yogurt with salt and pepper to taste. Serve this delicious salad on a bed of mixed greens or create a sandwich on a toasted croissant.
